Hi Elizabeth, iWork Pages does a straight export from it’s native file format to an ePub file and there is little else that you need to do. However, the more complicated or complex your book design is the more potential for various issues to crop up regarding the exported file. Whenever you export a file from it’s native format (Pages, MS Word, etc.) to another format it translates the file from one to the other, and someone had to program that translation, or properly known as a filter, to make it easy for you.
Pages is quite a nice program for creating a novel but not so much for a technical publication. Scrivener is a great program but it isn't a layout program, it is a writing program. For layout, I'd use InDesign or Quark Xpress and that is what most professional publishers would use as well (some might have an old copy of Framemaker but it is unlikely because it is so old). From my experience, most authors just write the book using their favorite word processing program (sadly it is often Word) and then when it is time to publish it, they give the publisher (or a designer) the file and they take that file and import it into a layout program and design the look and layout of the book (the font size, line spacing, etc). Putting a book together is rather complicated, especially if you aren't used to doing it.
As an entrepreneur, startup, and Mac user I can attest that using Apple’s word processing and page layout app that you CAN write a book with it. Because I’ve done it. And so have some others. First, take a look at my efforts in writing my first book, and you’ll see how good Pages can perform producing a print ready file. If I can do it, so can you. The ease of which you can get a book published compared with years ago makes the barrier much lower.
Some duplex printers will let you choose short-edge or long-edge—either will be fine, just make sure that the setting matches the setting in the booklet program. Short-edge will be less counter-intuitive for you, as there will be no upside-down text. • CocoaBooklet flips pages automatically, but has a preference to turn this off for short-edge flipping.

A small text box will appear in the middle of your document. To resize the text box, click just outside it (it will disappear) and then click on the box again. Handles will appear along its edges. As I said before, you have to know what method you are going to use to print the book, and make it for that method. If you are going to print thousands of copies of a 250 page book with full color process printing that means going to offset prrinting. The first thing to do is to talk to a suitable printer and find out what they require. Unfortunately that will not be a Pages file or even a pdf file from Pages. If you have never done this before and have no experience of DTP and commercial printing, I strongly advise you to employ a qualified designer or have an on staff designer at the Printer do it for you. It is not like creating material to print to your desktop printer.
I used margins of.35 all around. Sometimes if margins are too small, Word will cut off text, as the printer driver tells Word it can’t print that close to the edge.
Most of the time it is left to professionals. Most designers are familiar with gutter, bleed, footnotes, etc. But there are more complicated things that you have to know about when you put a book together. Things like creep, imposition, not to mention how to calculate the thickness of the spine based on the number of pages and the weight of the paper that is going to be used (not easy to do if you aren't used to it).
To duplicate the file, go File > Duplicate and then give it a new name. Any change made after that will be on the new file, not the original. To save a copy of a document in another format, you must export it using the File > Export To command.
